The brew bottler has a valve on the bottom end that lets the liquid flow only when you push the bottle up against the valve.
The bottle is filled from the bottom to minimise splashing the beer, to reduce the chances of oxidization (too much oxygen mixed with the beer can contribute to “off” flavours).
